A hearty open-faced sandwich featuring warm garlic-herb French bread topped with tender deli roast beef, sautéed mushrooms and onions, and melted Colby Jack cheese. Ingredients

4 tablespoons softened butter

1 clove garlic, minced

1/4 cup finely grated Parmesan cheese

2 tablespoons fresh minced parsley

1 loaf (14-16 oz) French bread

8 oz fresh mushrooms, sliced

2/3 cup sliced onions

1 tablespoon Worcestershire sauce

1 lb deli shaved roast beef

1/2 lb sliced Colby Jack cheese

Directions

  1. Preheat your oven to 400°F.

  2. Slice the French bread horizontally in half lengthwise to create two long, flat pieces.

  3. In a small bowl, combine the softened butter, minced garlic, grated Parmesan cheese, and fresh parsley. Stir until well blended.

  4. Spread half of the garlic-herb butter mixture on the cut side of each bread half, dividing it evenly.

  5. Press the two buttered halves together to reform the loaf. Wrap the entire loaf tightly in aluminum foil.

  6. Place the wrapped loaf in the preheated oven and bake for 15 minutes until warmed through and lightly toasted.

  7. While the bread is baking, heat a large skillet over medium-high heat and add the sliced mushrooms and onions. Sauté, stirring occasionally, until the vegetables are tender and lightly golden, about 10-15 minutes.

  8. Add the minced garlic to the skillet and cook for about 60 seconds until fragrant. Pour in the Worcestershire sauce and stir to combine. Remove from heat.

  9. Remove the toasted bread from the oven and carefully unwrap it. Place both halves cut-side up on a large baking sheet.

  10. Divide the roast beef evenly between the two bread halves, arranging it over the entire surface of each piece.

  11. Top each half with the sautéed mushroom and onion mixture, distributing it evenly.

  12. Arrange the sliced Colby Jack cheese over the mushroom mixture on both halves, covering the tops completely.

  13. Return the baking sheet to the oven and bake for 3-5 minutes until the cheese is completely melted and bubbling at the edges.

  14. Remove from the oven and cut each bread half into 3 equal pieces. Serve immediately while hot.

All ingredients are readily available at any major Charlotte grocer—Harris Teeter, Food Lion, Kroger, Walmart, and ALDI all stock French bread, roast beef (deli counter or packaged), Colby Jack, mushrooms, and onions year-round. Cost per serving lands around $2.50–$3.00, driven primarily by quality deli roast beef; butter, garlic, and cheese are economical fillers. The stated 35 minutes is honest for assembly and toasting, but only if roast beef is pre-sliced; if you're slicing a whole piece or roasting beef from scratch, you're looking at 90+ minutes. It's a straightforward weeknight sandwich that feeds six and requires minimal active attention—just toasting and assembly—making it household-friendly, though leftovers don't reheat well since the bread softens and the cheese congeals, best eaten same-day.
