Ingredients

16 large peeled and deveined shrimp

4 tablespoons olive oil, divided

Kosher salt and black pepper to taste

1/2 cup crumbled feta cheese

1 tablespoon fresh chopped dill

1 tablespoon olive oil for sauce

Directions

  1. Prepare 8 wooden or metal skewers, soaking wooden ones in water for at least 30 minutes to prevent charring.

  2. Pat the shrimp dry with paper towels and thread 2 shrimp onto each skewer, arranging them in a flat pattern.

  3. Brush the shrimp skewers with 4 tablespoons of olive oil and season generously with kosher salt and black pepper on both sides.

  4. Heat a grill or grill pan to medium-high heat. Cook the shrimp skewers for 2-3 minutes per side until they reach an internal temperature of 145F and are opaque and firm.

  5. While the shrimp cook, combine the crumbled feta cheese, fresh chopped dill, and 1 tablespoon of olive oil in a small bowl. Stir until well combined.

  6. Transfer the cooked shrimp skewers to a serving platter and serve immediately with the dill and feta sauce for dipping.
