2 cups Fresh blueberries
1 cup Apple juice
1½ cups Plain low-fat yogurt
1 teaspoon Ground cinnamon
Fresh mint leaves for garnish
Directions
Rinse the fresh blueberries under cold water and gently pat dry. Set aside a few whole berries for garnishing.
Add the rinsed blueberries, apple juice, low-fat yogurt, and ground cinnamon to a food processor or blender.
Blend until smooth and creamy, about 1 to 2 minutes, until all ingredients are fully incorporated and the soup reaches a uniform consistency.
