Ingredients
1 tablespoon olive oil
8 ounces spicy Italian sausage, casing removed
1/2 cup mini pepperoni, divided
1 (15-ounce) can tomato sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
8 ounces rotini pasta
1 1/2 cups water
Kosher salt, to taste
Freshly ground black pepper, to taste
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley leaves
Directions
Preheat your oven to broil setting.
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Add the spicy Italian sausage to the skillet, breaking it into small crumbles as it cooks. Cook for 3 to 5 minutes until the sausage is no longer pink and is nicely browned. Carefully drain off any excess fat from the skillet.
Stir in 1/4 cup of the pepperoni and heat for about 1 minute until warmed through.
Add the tomato sauce, dried oregano, dried basil, garlic powder, rotini pasta, and water to the skillet. Stir well to combine all ingredients. Season with kosher salt and freshly ground black pepper to your taste.
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low, cover the skillet, and simmer for 12 to 14 minutes, stirring occasionally, until the pasta is tender and cooked through.
Remove the skillet from the heat. Sprinkle the shredded mozzarella cheese evenly over the top of the pasta, then scatter the remaining 1/4 cup pepperoni over the cheese.
Carefully place the skillet into the preheated broiler and cook for about 2 minutes, until the cheese is completely melted and the top is golden brown and bubbly. Watch carefully to prevent burning.
Remove from the oven and serve immediately. Garnish with fresh chopped parsley if desired.
