Ingredients

1 can (15.5 ounces) low-sodium pinto beans, drained and rinsed

2 tablespoons chopped onion

1 teaspoon chili powder

1/2 cup shredded cheddar cheese

Directions

  1. Wash your hands thoroughly with soap and clean running water before handling food.

  2. Drain and rinse the pinto beans under cold water in a fine-mesh strainer. Transfer the beans to a medium bowl.

  3. Using the back of a fork or a potato masher, press the beans firmly against the sides of the bowl until you reach your desired consistency—leave some texture for a rustic consistency, or mash until nearly smooth for a creamier dip.

  4. Fold in the chopped onion and chili powder, stirring until evenly distributed throughout the mashed beans.

  5. Gently fold in the shredded cheddar cheese until fully incorporated.

  6. Transfer the dip to a serving bowl and serve at room temperature or warm. Accompany with fresh vegetable sticks, tortilla chips, or crackers for dipping.
