Ingredients

4 small tomatoes, tops sliced off

to taste Kosher salt

to taste Freshly ground black pepper

1 tablespoon vegetable oil

1 cup beer

2 cups shredded sharp cheddar cheese

2 tablespoons all-purpose flour

1 1/2 teaspoons dry mustard

1/8 teaspoon cayenne pepper

2 teaspoons Worcestershire sauce

4 eggs

4 slices sourdough bread, toasted

Directions

  1. Preheat oven to 400°F. Place the tomato halves cut-side up on a baking sheet, season with kosher salt and black pepper. Drizzle with half the vegetable oil. Roast for 15–18 minutes until soft and lightly caramelized around the edges.

  2. While tomatoes roast, prepare the cheese sauce. In a medium saucepan over medium heat, whisk together the flour, dry mustard, and cayenne pepper. Gradually add the beer while whisking constantly to avoid lumps, stirring until the mixture thickens slightly, about 2–3 minutes.

  3. Reduce heat to medium-low and add the shredded cheddar cheese in handfuls, stirring until fully melted and smooth. Stir in the Worcestershire sauce. Season with a pinch of kosher salt and black pepper to taste. Keep warm on low heat.

  4. Toast the sourdough bread slices until golden brown and crispy.

  5. Heat the remaining vegetable oil in a large skillet over medium heat. Carefully crack the eggs into the pan and fry until the whites are set and the yolks reach 160°F internal temperature for fully cooked eggs, or fry sunny-side up for 3–4 minutes if you prefer softer yolks (note: soft yolks will not reach 160°F).

  6. Place each toasted sourdough slice on a serving plate. Pour or ladle the warm cheese sauce generously over each slice of toast. Top each portion with a fried egg and position a roasted tomato half alongside. Serve immediately.
