Ingredients

2 medium tomatoes, finely chopped

1 tablespoon Old Bay seasoning

1 whole Juice of 1 fresh lemon

1/2 pound large shrimp, peeled and deveined

2 ears of corn, husked with kernels removed

1 fresh lime, divided for zest and juice

Salt to taste

Freshly ground black pepper to taste

Hot sauce to taste

Tortilla chips for serving

Directions

  1. Place the chopped tomatoes in a fine-mesh strainer or colander set over a bowl. Sprinkle lightly with salt and gently stir. Allow the tomatoes to sit undisturbed for several minutes, letting the excess liquid drain away.

  2. Fill a medium pot with water and bring it to a gentle simmer over medium-high heat.

  3. Add the Old Bay seasoning and lemon juice to the simmering water. Carefully add the peeled and deveined shrimp and cook for 2 to 3 minutes, until the shrimp are opaque and just cooked through with an internal temperature of 145F. Transfer the shrimp to a plate and allow them to cool completely, then roughly chop into bite-sized pieces.

  4. If using fresh corn kernels, leave them raw. If you prefer softer corn, bring a small pot of water to a boil, add the kernels, simmer for 1 to 2 minutes, then drain under cool running water.

  5. Transfer the corn kernels and chopped shrimp to a medium bowl.

  6. Using a microplane or fine grater, zest the lime over the bowl to extract the fragrant lime oils.

  7. Cut the zested lime in half and squeeze the juice into the bowl, discarding the seeds.

  8. Add the drained tomatoes to the bowl with the corn, shrimp, and lime juice.

  9. Using clean hands, gently toss all the ingredients together until just combined, taking care not to break up the tomatoes or shrimp.

  10. Taste the salsa and season with additional salt, pepper, and hot sauce to your preference. Serve immediately with tortilla chips on the side.
