Ingredients

4 medium baking apples

1/4 cup brown sugar

1 teaspoon ground cinnamon

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. Rinse the apples under cool running water and pat dry. Using a small sharp knife or apple corer, carefully remove the core from each apple, creating a cavity for the filling but being careful not to cut all the way through the bottom.

  3. Cut a thin horizontal slice from the bottom of each apple to create a stable, flat surface so it sits upright in the dish without rolling.

  4. Arrange the apples upright in a microwave-safe baking dish, spacing them evenly.

  5. In a small bowl, combine the brown sugar and ground cinnamon, stirring until well blended.

  6. Spoon the brown sugar-cinnamon mixture evenly into the center cavity of each apple, dividing the filling equally among the four apples.

  7. Cover the baking dish loosely with microwave-safe wax paper to prevent splashing while allowing some steam to escape. Microwave on high power for 6 to 10 minutes, until the apples are very soft and tender when pierced with a fork. Cooking time may vary depending on the size of the apples and your microwave's power level.

  8. Remove the dish carefully from the microwave (it will be hot), let cool for 1 to 2 minutes, then serve while still warm.
