4 medium baking apples
1/4 cup brown sugar
1 teaspoon ground cinnamon
Directions
Wash your hands thoroughly with soap and water before beginning.
Rinse the apples under cool running water and pat dry. Using a small sharp knife or apple corer, carefully remove the core from each apple, creating a cavity for the filling but being careful not to cut all the way through the bottom.
Cut a thin horizontal slice from the bottom of each apple to create a stable, flat surface so it sits upright in the dish without rolling.
Arrange the apples upright in a microwave-safe baking dish, spacing them evenly.
In a small bowl, combine the brown sugar and ground cinnamon, stirring until well blended.
Spoon the brown sugar-cinnamon mixture evenly into the center cavity of each apple, dividing the filling equally among the four apples.
Cover the baking dish loosely with microwave-safe wax paper to prevent splashing while allowing some steam to escape. Microwave on high power for 6 to 10 minutes, until the apples are very soft and tender when pierced with a fork.
