Ingredients

1/3 cup granulated sugar

2 teaspoons baking powder

3/4 teaspoon fine salt

1/2 teaspoon ground nutmeg

1 large egg plus 1 egg yolk

2 tablespoons unsalted butter, melted

1 to 2 tablespoons whole milk

1 teaspoon vanilla extract

1 cup powdered sugar

8 tablespoons pure maple syrup

Directions

  1. In a large mixing bowl, whisk together the granulated sugar, baking powder, salt, and ground nutmeg until well combined.

  2. Add the whole egg, egg yolk, melted butter, milk, and vanilla extract to the dry mixture. Stir until all ingredients are just combined; the batter will be thick and slightly lumpy.

  3. Preheat your waffle iron according to the manufacturer's instructions.

  4. Place approximately 1 tablespoon of batter into each waffle cavity. Close the lid and cook for 2 to 3 minutes, or until the waffles are golden brown and crispy.

  5. Carefully remove the cooked waffles to a wire rack. Repeat the cooking process with the remaining batter.

  6. To make the glaze, whisk together the powdered sugar and maple syrup in a small bowl until smooth and well blended.

  7. Once the waffles have cooled slightly, drizzle the glaze over each waffle or dip them directly into the glaze to coat evenly.

  8. Set the glazed waffles on a clean surface and allow the glaze to set completely before serving. These waffles are best enjoyed the day they are made.
