Ingredients
1 pound lean pork, cut into bite-sized chunks
4 medium apples, cored and quartered with skin intact
4 large carrots, peeled and cut into chunks
4 slices fresh ginger, unpeeled
1 teaspoon dried orange peel (optional)
1/2 teaspoon salt
20 cups water
Directions
Wash your hands thoroughly with soap and water before beginning food preparation.
In a large pot, add the pork chunks, quartered apples with skin, carrot chunks, ginger slices, dried orange peel if using, and salt.
Pour in 20 cups of water and bring the mixture to a boil over high heat.
Once boiling, reduce heat to medium and maintain a gentle simmer. Continue cooking for 3 to 4 hours, until the soup reduces to approximately 8 cups of liquid.
Using a fine skimmer or spoon, carefully skim any foam or fat from the surface of the soup.
Ladle the soup into bowls and serve hot.
Store any leftover soup in a covered container in the refrigerator for up to 3 days.
