Tuna Quesadillas

Ingredients
1 can tuna fish (5 ounces, packed in water, drained)
1 tablespoon light mayonnaise
4 flour tortillas (8 inch)
1/2 cup reduced-fat cheddar cheese, shredded
Directions
Drain the canned tuna and place it in a small bowl. Mix in the light mayonnaise until well combined.
MICROWAVE METHOD: Spoon the tuna mixture onto one half of each tortilla, dividing equally among all four tortillas.
Top each tuna filling with a portion of the shredded cheddar cheese, then fold each tortilla in half to enclose the filling.
Place the folded quesadillas on a microwave-safe plate and microwave on high power for 60 seconds, rotating the plate halfway through cooking time, until the cheese is melted and the tortillas are warm.
STOVETOP METHOD (ALTERNATIVE): Divide the tuna mixture between two of the flour tortillas, spreading it evenly.
Sprinkle half of the shredded cheddar cheese over the tuna mixture on each tortilla, then top with one of the remaining tortillas to create a sandwich.
Lightly spray a skillet with non-stick cooking spray and heat over medium heat.
Place the quesadillas in the hot skillet and cook until the bottom is golden brown and crispy, about 2-3 minutes. Carefully flip and cook the other side until golden brown and the cheese is fully melted, another 2-3 minutes.
Remove from heat and cut each quesadilla into triangles or wedges. Serve immediately while warm.
