Ingredients

1 cup unsalted butter, at room temperature

1 cup granulated sugar

2 large eggs

1½ cups all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

3–4 large fresh peaches, peeled, pitted, and sliced into 8 pieces each

1 tablespoon brown sugar

1 teaspoon ground cinnamon

Directions

  1. Preheat your oven to 350°F. Line the bottom of a 9-inch springform pan with parchment paper. Spray the parchment and the sides of the pan with cooking spray, then wipe away any excess.

  2. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. In the bowl of a stand mixer, beat the room-temperature butter and granulated sugar together until the mixture is light and smooth, about 2–3 minutes.

  4. Add the eggs one at a time to the butter mixture, beating well after each addition.

  5. Add the flour mixture and beat on low speed until just combined and smooth.

  6. Carefully pour and spread the batter evenly into the prepared springform pan.

  7. Gently press the peach slices into the batter in a decorative pattern, starting from the edges and working toward the center in a circular motion until the entire top is covered with peaches.

  8. In a small bowl, whisk together the brown sugar and ground cinnamon.

  9. Sprinkle the cinnamon-sugar mixture evenly over the top of the buckle.

  10. Place the buckle in the preheated 350°F oven and bake for 50–60 minutes, until a toothpick inserted into the cake (not the peaches) comes out clean or with just a few moist crumbs. If the top begins to brown too deeply during baking, cover loosely with aluminum foil.

  11. Remove from the oven and allow the buckle to cool in the pan for at least 30 minutes before serving. This allows the cake to set and the flavors to develop.
