1 tablespoon vegetable oil
1 medium onion, chopped
2 cups low-sodium chicken broth
2 cups cooked, boneless chicken, diced
2 cups low-sodium canned or cooked tomatoes
2 cups cooked or canned low-sodium lima beans
2 cups low-sodium canned or cooked whole kernel corn
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat for about 1 minute until shimmering.
Add the chopped onion to the hot oil and sauté, stirring occasionally, until softened and translucent, approximately 4–5 minutes.
Pour in the chicken broth, diced cooked chicken, canned tomatoes, lima beans, and corn. Stir well to combine all ingredients.
Reduce heat to medium-low and bring the mixture to a gentle simmer. Cook uncovered for 30 minutes, stirring occasionally, to allow the flavors to meld together.
