Ingredients

4 boneless chicken breasts

1/2 teaspoon kosher salt

1/2 teaspoon ground white pepper

2 tablespoons unsalted butter

1 10 oz. package frozen artichoke hearts, thawed and halved

2 tablespoons dry sherry

Zest of one Meyer or other organic lemon

1 tablespoon fresh lemon juice

1/2 cup crème fraîche

1/2 cup grated Parmesan cheese

1/2 cup panko breadcrumbs

Directions

  1. Pat the chicken breasts dry and season both sides generously with kosher salt and ground white pepper.

  2. In a large skillet, melt the butter over medium-high heat. Once foaming, add the seasoned chicken breasts and sear for 5-6 minutes on each side until golden brown and the internal temperature reaches 165°F. Transfer chicken to a plate.

  3. In the same skillet, add the thawed artichoke hearts and sauté over medium heat for 2-3 minutes until lightly golden, stirring occasionally.

  4. Pour in the dry sherry and scrape up any browned bits from the bottom of the pan. Cook for about 1 minute to allow the alcohol to evaporate.

  5. Reduce heat to medium-low and stir in the crème fraîche, lemon zest, and lemon juice. Mix until smooth and combined.

  6. Nestle the cooked chicken breasts back into the skillet, spooning some sauce over each one.

  7. In a small bowl, combine the panko breadcrumbs and grated Parmesan cheese.

  8. Sprinkle the panko-Parmesan mixture evenly over the top of each chicken breast.

  9. Transfer the skillet to a preheated 400°F oven for 8-10 minutes until the topping is golden brown and crispy. If your skillet is not oven-safe, transfer the chicken and sauce to a baking dish before adding the topping.

  10. Remove from oven, let rest for 2 minutes, then divide among serving plates. Spoon extra artichoke-lemon sauce around each chicken breast.
