Ingredients
1/2 stick unsalted butter
2 cups yellow onions, finely diced
Salt, to taste
Freshly ground black pepper, to taste
1 tablespoon minced garlic
1 1/2 pounds corned beef, chopped into bite-sized pieces
1 1/2 pounds Idaho potatoes, peeled, diced small, and blanched
Directions
Preheat your oven to 400 degrees Fahrenheit.
Place a large oven-safe skillet over medium-high heat. Add the butter and allow it to melt completely.
Add the diced onions to the melted butter. Season lightly with salt and pepper. Sauté, stirring occasionally, for about 4 minutes until the onions become soft and begin to turn golden.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the chopped corned beef to the skillet and continue sautéing for 2 minutes, stirring to combine with the onions and garlic.
Fold in the blanched diced potatoes. Season the mixture again with salt and pepper to taste. Cook for an additional 4 minutes, stirring gently to blend all the ingredients.
Remove the skillet from the heat. Using the back of a large spoon or spatula, press the mixture firmly and evenly into the bottom of the pan to compact it.
Transfer the skillet to the preheated 400-degree oven. Bake for 8 to 10 minutes until the top is golden brown and crispy.
Remove from the oven and allow to cool for 1 minute. Slice into 6 individual servings and serve immediately.
