Ingredients
1/2 cup almond butter
1/2 cup butter, softened
3/4 cup brown sugar
1/4 cup white sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chocolate chips
Directions
In a stand mixer, cream together the softened butter, almond butter, brown sugar, and white sugar until the mixture is light and fluffy, about 2-3 minutes.
Add the egg to the mixer and beat until fully incorporated, then add the vanilla extract and mix until combined.
In a separate medium bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredient mixture to the wet ingredients in the mixer and beat until the dough just comes together.
Fold in the chocolate chips by hand using a spatula until evenly distributed throughout the dough.
Transfer the dough to a bowl, cover, and refrigerate for at least 30 minutes.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 8 minutes until the edges are set but the centers still appear slightly underbaked.
Remove from the oven and allow the cookies to rest on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
