Ingredients
2 cups whole milk Greek yogurt
3/4 cup pitted dates, sliced lengthwise
1/4 cup fresh parsley, finely chopped
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
1/4 teaspoon coarse sea salt
Directions
Divide the Greek yogurt evenly among four serving bowls or plates, creating a small mound in the center of each.
In a small bowl, combine the sliced dates, chopped parsley, lemon juice, and salt. Toss gently until the ingredients are well mixed and the dates are evenly coated with the lemon juice and oil.
Spoon the date relish generously over each mound of lebneh.
Drizzle the extra virgin olive oil around the lebneh and relish on each plate.
Serve immediately at room temperature. The lebneh is ready to enjoy as a spread or dip with flatbread, crackers, or fresh vegetables.
