Ingredients

1 cup whole wheat flour

1 cup all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/4 cup granulated sugar

1/2 teaspoon salt

1 1/3 cup whole milk

1 tablespoon vinegar

1 teaspoon vanilla extract

2 large eggs

1/2 cup unsalted butter, melted and cooled

8 ounces cream cheese, softened

1/2 cup fresh blueberries

Directions

  1. Preheat your oven to 400°F. In a medium mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, 1/4 cup sugar, and salt. Set this dry mixture aside.

  2. In a large mixing bowl, whisk together the whole milk, vinegar, 1 teaspoon vanilla extract, eggs, and melted butter until well combined.

  3. Pour the dry ingredients into the wet ingredients and whisk until just combined. Do not overmix. Gently fold in the blueberries.

  4. In a small bowl, combine the softened cream cheese with a small amount of sugar and vanilla extract. Stir with a fork until smooth and well mixed.

  5. Spray 18 muffin cups with nonstick cooking spray. Fill each cup about 1/3 to 1/2 way full with the blueberry batter. Using a small scoop, place a small dollop of the cream cheese mixture in the center of each cup. Top each with a small amount of remaining batter to cover the filling.

  6. Bake for 15 minutes, or until the muffins are golden brown and a toothpick inserted into the muffin portion comes out clean.

  7. Allow the muffins to cool completely in the muffin tin before removing. Store in an airtight container in the refrigerator.
