Ingredients
2 tablespoons dried egg mix (or 1 large egg)
1/4 cup water
1/4 pound ground beef
1/2 onion, finely chopped
1/2 green bell pepper, chopped
2 tablespoons vegetable oil
1/2 can (8 ounces) reduced-sodium peas, drained
1/2 can (8 ounces) low-sodium kidney beans, drained
4 cups cooked rice, cold
1/4 teaspoon black pepper
Directions
In a small bowl, whisk together the dried egg mix and water until well combined. Set aside.
Heat the vegetable oil in a large skillet over medium heat. Add the ground beef, chopped onion, and green bell pepper.
Cook the beef and vegetable mixture, breaking up the meat as it cooks, for about 10 minutes until the beef is browned and the vegetables are softened. Ensure the beef reaches an internal temperature of 160°F.
Pour the egg mixture into the skillet with the cooked beef and vegetables.
Scramble the eggs gently over medium heat for about 5 minutes, stirring frequently until the eggs are cooked through and no liquid remains.
Add the drained peas and kidney beans to the skillet.
Stir well and cook for about 5 minutes until the peas and beans are heated through.
Add the cold cooked rice and black pepper to the skillet.
Using a wooden spoon or spatula, break apart any clumps of rice and stir everything together until well combined.
Cook for about 5 minutes, stirring occasionally, until the rice is heated through and all ingredients are evenly distributed.
Transfer the dirty rice to a serving dish and serve hot.
