Ingredients
2 bone-in pork loin rib chops, about 1 inch thick (8 to 10 ounces each)
1 1/4 teaspoons kosher salt, divided
1/4 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons vegetable oil
4 cloves garlic, minced
3 tablespoons honey
1 1/2 teaspoons apple cider vinegar
2 tablespoons water
1/4 teaspoon red pepper flakes
3 tablespoons fresh parsley leaves, scallion greens, chives, or cilantro
Directions
Season both pork chops on both sides with 1 teaspoon of kosher salt and 1/4 teaspoon of black pepper.
Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Once hot, carefully place the pork chops in the skillet and sear for 4 to 5 minutes per side until a golden crust forms. The internal temperature should reach 145°F (63°C). Transfer the cooked pork chops to a plate.
In the same skillet, reduce heat to medium. Add the minced garlic and cook for about 30 seconds until fragrant, stirring constantly.
Stir in the honey, apple cider vinegar, water, remaining 1/4 teaspoon of kosher salt, and red pepper flakes. Simmer for 1 to 2 minutes, stirring occasionally, until the sauce is slightly thickened and glossy.
Return the pork chops to the skillet, turning to coat both sides with the sauce. Cook for another 30 seconds to 1 minute to warm through.
Transfer the pork chops to a serving platter and spoon the remaining sauce over the top. Garnish with the fresh herbs and a pinch of black pepper. Serve immediately.
