Ingredients

24 oz whole milk ricotta cheese

1 cup powdered sugar

2 cups mini chocolate chips, divided

6 oz semisweet chocolate, chips or chopped

30 waffle cones, original or chocolate-flavored

Directions

  1. Prepare the ricotta cheese for draining by lining a wire mesh strainer with cheesecloth and placing it over a bowl. Transfer the ricotta into the cheesecloth-lined strainer, then refrigerate overnight. Occasionally press down on the ricotta to encourage drainage and remove excess moisture.

  2. If desired, use a serrated knife to trim 1 inch off the pointed tip of each waffle cone to create shorter, mini-sized cones. Line two baking sheets with wax paper and set aside.

  3. Place 1 cup of the mini chocolate chips in a shallow dish. Melt the semisweet chocolate in the microwave using 30-second intervals, stirring well between each interval, until completely smooth.

  4. Dip the open end of each cone into the melted chocolate, then immediately dip it into the dish of mini chocolate chips. Place each chocolate-coated cone upright on the prepared wax paper-lined baking sheets and allow the chocolate coating to set at room temperature.

  5. Once the chocolate is set, transfer the prepared cones to an airtight container for storage if not using immediately. They will keep for up to one week.

  6. When ready to serve, combine the strained ricotta cheese and powdered sugar in a large bowl. Mix until well blended, then gently fold in the remaining 1 cup of mini chocolate chips.

  7. Transfer the ricotta filling to a piping bag fitted with a large round tip, or fill a resealable plastic bag and cut off one corner. Fill each cone to the top with the ricotta mixture just before serving, as the filling will soften the cones if allowed to sit for extended periods.

This is a simple, no-bake assembly that Charlotte grocers stock everywhere—ricotta and chocolate chips are regulars at Harris Teeter, Food Lion, Walmart, and ALDI, and waffle cones are hard to miss. The stated 1485 minutes (nearly 25 hours) is wildly inaccurate for a dessert that takes maybe 20 minutes active time plus optional chilling; if you're not freezing them, plan 30 minutes total. Cost per serving is genuinely low—ricotta and chocolate chips are bulk-friendly, and waffle cones run under a dollar per piece, so you're looking at 50 cents or less per cone. The real caveat is that these do not keep well once filled: the waffle cone softens quickly from the moist ricotta filling, so assemble them same-day and eat within an hour or two for best texture, which limits make-ahead appeal on a busy weeknight.
