Ingredients

1 baguette, sliced into 12 pieces approximately 1 to 1.5 inches thick

1/2 rotisserie chicken, shredded or chopped

1/4 cup mayonnaise

2 tablespoons whole grain mustard

1 cup walnuts, chopped and lightly toasted

1 cup seedless red grapes, halved

Salt and freshly ground black pepper to taste

2 tablespoons freshly grated Parmesan cheese

2 tablespoons fresh chives, chopped

Directions

  1. Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet in a single layer and toast them for 5 to 7 minutes until the edges are light golden brown and crisp. Remove from the oven and set aside to cool slightly.

  2. While the bread toasts, spread the walnuts on a small baking sheet and toast them alongside the baguette slices for the last 3 to 4 minutes until fragrant and lightly browned. Transfer to a bowl and let cool.

  3. In a large mixing bowl, combine the shredded rotisserie chicken, mayonnaise, and whole grain mustard. Mix until the chicken is evenly coated.

  4. Add the toasted walnuts and halved grapes to the chicken mixture. Toss gently to combine, being careful not to crush the grapes.

  5. Season the chicken salad with salt and freshly ground black pepper to taste.

  6. Spoon approximately 2 tablespoons of the chicken salad onto each toasted baguette slice.

  7. Arrange the bruschetta on a serving platter. Garnish each piece with a light sprinkle of grated Parmesan and chopped fresh chives.

  8. Serve immediately while the bread is still warm and crisp.

Everything on the ingredient list is available at any Charlotte chain—baguettes, rotisserie or deli chicken, walnuts, and grapes are staples at Harris Teeter, Food Lion, and Kroger. Cost per serving lands around $3–4 if you use store-bought rotisserie chicken, with the grapes and walnuts being the priciest components. The stated 25 minutes is honest if you buy pre-cooked chicken and pre-cut baguette slices; if you're roasting chicken from scratch or toasting bread yourself, add 15 minutes, though the prep work itself (chopping, mixing) is truly five minutes. This is a no-fuss weeknight dinner or lunch that holds fine in the fridge for a day, reheats poorly on its own but works cold straight from the container the next day, and feeds four light eaters or two hungry people with sides.
