2 pounds small new potatoes, rinsed

1/2 cup kosher salt

1 recipe ají, for serving

  1. Preheat your oven to 400°F. Pat the rinsed new potatoes dry with paper towels and place them in a large mixing bowl.

  2. Add the kosher salt to the potatoes and toss gently but thoroughly, ensuring every potato is evenly coated with salt.

  3. Spread the salt-coated potatoes in a single layer on a rimmed baking sheet with no added oil.

  4. Roast in the preheated oven for 30 to 35 minutes, stirring halfway through, until the potatoes are tender when pierced with a fork and the salt has hardened into a crust.

  5. Remove from the oven and let rest for 2 minutes. Gently brush or crack away excess salt before plating.
