Chicken Panini with Apples, Swiss Cheese and Thyme

Ingredients
4 slices whole wheat bread
4 teaspoons spicy brown mustard
4 slices low fat Swiss cheese
4 ounces cooked chicken breast, sliced
½ large apple, thinly sliced
4 tablespoons fresh chives, chopped
2 teaspoons fresh thyme leaves, stripped from stems
Olive oil cooking spray
Directions
Preheat a panini grill, or alternatively, a non-stick skillet, over medium heat. Lightly coat with olive oil cooking spray to prevent sticking.
Spread one teaspoon of spicy brown mustard on each of the four bread slices. Place one slice of Swiss cheese on each bread slice.
On two of the bread slices, layer the apple slices, cooked chicken breast slices, chopped chives, and fresh thyme leaves. Top each with the remaining two cheese-covered bread slices, cheese side down, to create two complete sandwiches.
Place the sandwiches on the heated panini grill (or in the skillet). If using a panini maker, close the lid and cook until the cheese melts and the bread becomes golden brown, about 3-4 minutes. If using a skillet, press down firmly on each sandwich with a spatula and cook for 2-3 minutes until golden brown. Carefully flip and cook the other side for another 2-3 minutes until golden and the cheese is fully melted.
Remove the panini sandwiches from the heat and let them rest for 2-3 minutes to allow the cheese to set and cool slightly. Slice each sandwich diagonally if desired and serve immediately.
