Ingredients
12.5 oz white premium chunk chicken breast
5 large eggs
2 tablespoons mayonnaise
5 oz sweet gherkin pickles, chopped
Directions
Place eggs in a pot of cold water and bring to a boil over high heat. Once boiling, remove from heat, cover, and let sit for 12 minutes. Transfer eggs to an ice bath and let cool completely, then peel and chop into bite-sized pieces.
Drain the canned chicken breast and flake it into a large mixing bowl, breaking it into small chunks.
Add the chopped hard-boiled eggs to the chicken and gently mix to combine.
Chop the sweet gherkin pickles into small pieces and add to the chicken and egg mixture.
Pour the mayonnaise over the mixture and fold everything together gently until well combined, being careful not to break up the chicken and egg pieces too much.
Divide the chicken salad among 6 servings and serve immediately on bread, lettuce wraps, or crackers as desired.
Comments
All four ingredients are reliably stocked at every Charlotte chain—Harris Teeter, Food Lion, Publix, Walmart, ALDI, and Kroger. The 20-minute claim holds if you use a rotisserie chicken from the deli or buy pre-cooked chicken breast; poaching from raw adds ten minutes you should budget for. At roughly $2 to $2.50 per serving (depending on whether you use store-brand mayo and whether the chicken is sale-priced), this is weeknight-friendly and scales easily. The dish holds well in the refrigerator for 2 to 3 days, making it excellent for next-day lunch, and it feeds a family without fussing.
