Ingredients

2 cups dry great northern beans

3 cups water (for soaking)

2 tablespoons vegetable oil

1/2 cup chopped onion

1/2 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

4 ounces chopped ham

8 cups water (for cooking)

1/4 teaspoon salt

1 cup diced tomatoes (fresh or canned low-sodium)

1 tablespoon distilled white vinegar

Directions

  1. Place the dry great northern beans in a medium bowl and cover with 3 cups of water. Let soak overnight (or at least 8 hours) at room temperature.

  2. Drain the soaked beans in a colander and rinse thoroughly under cold running water.

  3. Heat the vegetable oil in a large pot over medium-high heat. Add the chopped onion, chicken pieces, and ham. Cook, stirring occasionally, for about 5 minutes until the onion is softened and the chicken is beginning to brown. The chicken should reach an internal temperature of 165°F.

  4. Add the drained beans, 8 cups of fresh water, and salt to the pot. Stir well to combine all ingredients.

  5. Increase the heat to bring the soup to a boil. Once boiling, let it cook for 5 minutes.

  6. Reduce the heat to low and simmer gently for about 1 hour, stirring every 15 minutes. The beans should become tender and the soup will thicken slightly.

  7. Stir in the diced tomatoes and vinegar. Continue simmering over low heat for an additional 20 minutes, allowing the flavors to meld.

  8. Taste and adjust seasoning if needed. Ladle the soup into bowls and serve hot.
