1 small head fresh cauliflower, cut into florets

1 large egg

¼ cup finely grated parmesan cheese

¼ cup finely shredded part-skim mozzarella cheese

½ teaspoon sea salt

¼ teaspoon dried thyme

¼ teaspoon crushed red pepper flakes

Directions

  4. Allow the cauliflower to cool until you can handle it comfortably. Divide the cooled cauliflower into two portions and place each portion into a clean, thin kitchen towel or cheesecloth. Squeeze firmly and repeatedly to extract as much moisture as possible—the drier the cauliflower, the crispier your final crust will be.

  5. Transfer the thoroughly drained cauliflower crumbs to a mixing bowl. You should have approximately two tennis-ball-sized portions of dried cauliflower.

  6. Add the parmesan cheese, mozzarella cheese, sea salt, dried thyme, and red pepper flakes to the cauliflower crumbs. Crack the egg into the bowl and mix all ingredients together thoroughly until well combined and the mixture holds together.

  7. Form the mixture into a ball and place it on the prepared baking sheet. Top with another piece of parchment paper and gently roll out the dough as thin as possible using a rolling pin or the bottom of a wine bottle, creating either a circular pizza shape or a rectangular flatbread.

  8. Bake in the preheated oven for 15 to 20 minutes, until the edges are golden brown and the crust is firm to the touch. Remove from the oven and cool slightly before adding your desired toppings.
