Ingredients
1 egg
3 tablespoons milk
1 tablespoon unsweetened applesauce
¾ cup rolled oats
½ cup white whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
1 tablespoon ground flaxseed (optional)
Directions
In a small bowl, whisk together the egg, milk, and applesauce until well combined and smooth.
In a separate larger bowl, combine the rolled oats, white whole wheat flour, baking powder, baking soda, cinnamon, and ground flaxseed if using.
Pour the wet ingredients into the dry ingredients and gently stir with a spatula until just combined. The batter should be slightly lumpy; do not overmix.
Heat a griddle or non-stick skillet over medium-high heat and lightly oil or butter the surface. Once hot, pour ¼-cup portions of batter onto the griddle, spacing them a few inches apart.
Cook for 2-3 minutes until the edges appear set and the bottom is golden brown. Flip carefully and cook the other side for an additional 2-3 minutes until golden and cooked through, checking that the internal temperature reaches 160F.
Transfer the finished pancakes to a plate and serve warm with your choice of toppings such as berries, yogurt, or maple syrup.
