Ingredients

2½ tablespoons Unsalted butter

⅓ medium Sweet onion, sliced thin

1 medium Gala apple, peeled, cored, and sliced thin

1 teaspoon Dried sage

½ teaspoon Dried thyme

½ teaspoon Dried rosemary, crushed

1 teaspoon Brown sugar

⅛ teaspoon Ground cinnamon

6 Boneless pork chops, thin-cut

¼ cup Water or apple cider

Directions

  1. Heat 1 tablespoon of the butter in a large skillet over medium-high heat until it foams and begins to turn golden brown, about 2 minutes.

  2. Working in batches if needed to avoid crowding, add the pork chops and sear for 2–3 minutes per side until golden and cooked through to an internal temperature of 145°F. Transfer to a clean plate.

  3. Reduce heat to medium and add the remaining 1½ tablespoons butter to the skillet.

  4. Add the sliced onion and cook gently, stirring occasionally, until softened and just beginning to caramelize, about 5–6 minutes.

  5. Stir in the dried sage, thyme, rosemary, brown sugar, and cinnamon, mixing well to distribute the spices evenly, about 1 minute.

  6. Add the sliced apple to the skillet and cook, stirring gently, until the apples begin to soften and release their juices, about 3–4 minutes.

  7. Deglaze the pan by pouring in the water or apple cider, scraping up any browned bits from the bottom with a wooden spoon.

  8. Return the pork chops to the skillet, nestling them into the apple-onion mixture, and simmer gently for 2–3 minutes until the sauce thickens slightly and flavors meld.

  9. Serve each pork chop topped generously with the apple, onion, and brown butter sauce.
