Ingredients
5 cloves garlic, minced
1 cup white wine
3 tablespoons Cajun seasoning, plus extra to taste
4 andouille sausages, cut into thirds
4 ears of corn, halved
2 pounds small red potatoes, halved
2 pounds snow crab legs
2 sticks butter, melted
Directions
Fill a large pot halfway with water and bring to a boil over high heat. Stir in the minced garlic, white wine, and Cajun seasoning until well combined.
Add the sliced andouille sausages, corn halves, and halved red potatoes to the boiling broth. Reduce heat to medium-high and simmer for 15 minutes, allowing the potatoes and vegetables to soften.
Add the snow crab legs to the pot and continue boiling for 10 minutes until the crab is heated through.
Using a slotted spoon or tongs, transfer all the cooked ingredients to a large serving bowl or platter, discarding the cooking broth or reserving it separately if desired.
Drizzle the melted butter over the platter and sprinkle with additional Cajun seasoning to taste. Serve immediately with fresh lime wedges on the side if desired.
Comments
Crab legs are the budget-breaker here; expect $18–25 per pound at any Charlotte grocer, pushing the per-serving protein cost alone to $8–12, making this a special-occasion dish rather than weeknight rotation. Andouille sausage, cajun seasoning, corn, and potatoes are reliably stocked at Harris Teeter, Food Lion, Publix, Walmart, ALDI, and Kroger, so no extra stops are needed once you commit to the crab expense. The 35-minute window is honest for a boil, but understand that snow crab legs thaw quickly and overcooking them by minutes turns them rubbery, so active attention during the final 5–8 minutes matters. This is a same-night, festive dish—leftovers don't improve—but it feeds five generously and requires no knife skills, making it right for a summer gathering rather than a rushed Tuesday.
