Pork Burgers With Onions and Peppers

Ingredients
4 tablespoons olive oil, divided
1 bell pepper, seeded and cut into strips
1 small onion, thinly sliced
kosher salt and black pepper to taste
1 pound ground pork
1 pound Italian sausage, casings removed
4 onion rolls, toasted
ketchup (optional)
Directions
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the bell pepper strips and sliced onion, season with a pinch of salt and black pepper, and sauté for 8-10 minutes, stirring occasionally, until the vegetables are soft and lightly caramelized. Transfer to a plate and set aside.
In a large bowl, combine the ground pork and Italian sausage. Mix gently with your hands until just combined—do not overmix. Form the mixture into 4 equal patties, each about 3/4 inch thick. Make a small indent in the center of each patty with your thumb to prevent it from puffing up during cooking.
Heat the remaining 2 tablespoons of olive oil in the same skillet over medium-high heat. Once hot, carefully place the patties in the skillet.
Cook the burgers for 5-6 minutes on the first side without moving them, then flip and cook for an additional 4-5 minutes on the second side until the internal temperature reaches 160°F when measured with a meat thermometer at the thickest part.
Top each cooked burger patty with a portion of the sautéed peppers and onions.
Place each loaded burger patty on a toasted onion roll. Serve with ketchup on the side if desired.
