Ingredients

1 cup canned peaches, drained and sliced

1 cup canned pear halves, drained and sliced

6 pitted prunes, halved

1/4 teaspoon vanilla extract

1 orange

1 cup low-fat granola

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. In a large microwave-safe bowl, combine the drained peaches, drained pears, halved prunes, and vanilla extract. Mix gently to combine all ingredients.

  3. Zest the orange by rubbing it against a fine grater to collect 1 teaspoon of orange peel.

  4. Cut the orange in half and squeeze it firmly, collecting 1/4 cup of fresh orange juice.

  5. Stir the orange zest and orange juice into the fruit mixture until evenly distributed.

  6. Evenly distribute the low-fat granola over the top of the fruit mixture as a finishing layer.

  7. Microwave the cobbler uncovered on high power for 5 minutes, until the fruit is heated through and the mixture is warm.

  8. Remove from the microwave and let the cobbler rest for 2 minutes to allow flavors to meld slightly.

  9. Divide the warm cobbler evenly among 4 bowls and serve immediately while warm.

This cobbler delivers real fruit flavor and genuinely takes 17 minutes—the fruit is not cooked down, just layered with granola and a quick orange-vanilla dressing, so there is no bake time. Peaches, pears, and prunes are all reliably stocked at Harris Teeter, Food Lion, ALDI, and Walmart year-round, and you will find granola at any of them; vanilla extract and an orange are pantry basics in Charlotte. At roughly $1.50 to $2.00 per serving depending on whether you buy in-season peaches or frozen, this is genuinely cheap. The main caveat is seasonality: fresh peaches and pears shine in summer and early fall, but in winter you are leaning on prunes and frozen fruit, which shifts the flavor considerably. It does not reheat—serve it the same night, as the granola softens quickly once the juice pools. This works well for a light weeknight dessert or breakfast for four, requires no skill, and the honest prep time makes it a genuine fit for a busy kitchen.
