Ingredients

¾ cup all-purpose flour

¾ cup sugar

1 tablespoon sugar

1 teaspoon baking powder

¼ teaspoon salt

¾ cup milk

4 tablespoons butter

2 cups fresh raspberries

Directions

  1. Preheat your oven to 350°F.

  2. In a medium bowl, whisk together the flour, ¾ cup sugar, baking powder, and salt until well combined.

  3. Pour the milk into the flour mixture and stir until you have a smooth, lump-free batter.

  4. Place the butter in an 8×8 inch baking dish and transfer it to the preheated oven. Allow the butter to melt completely, about 2–3 minutes.

  5. Carefully pour the batter into the hot baking dish with the melted butter.

  6. Distribute the fresh raspberries evenly over the batter, then sprinkle the remaining 1 tablespoon of sugar over the top.

  7. Bake for 50–60 minutes until the top is golden brown and the edges are bubbling. The cake should be set but still moist underneath.

  8. Remove from the oven and let cool for 5–10 minutes. Serve warm with vanilla ice cream, or cool completely and serve with whipped cream and fresh berries as garnish.
