Ingredients

1 cup butter

2 cups sugar

1 1/2 teaspoons vanilla extract

4 large eggs

1 cup all-purpose flour

2/3 cup unsweetened cocoa powder

1 teaspoon baking powder

pinch pinch of salt

2-3 tablespoons graham cracker crumbs, divided

1 1/2 cups chocolate chips

1 1/2 cups mini marshmallows

Directions

  1. Preheat your oven to 350°F. Line an 11x7 inch baking pan with parchment paper, allowing about 1 inch of overhang on the sides for easy removal later.

  2. Melt the butter in a microwave-safe bowl or small saucepan over medium heat, stirring occasionally until completely melted.

  3. Whisk the melted butter with the sugar and vanilla extract until well combined. The mixture should be smooth.

  4. Add the eggs one at a time to the butter mixture, beating well after each addition until fully incorporated.

  5. In a separate bowl, combine the flour, cocoa powder, baking powder, salt, and 1-2 tablespoons of the graham cracker crumbs.

  6. Gently fold the dry ingredients into the wet ingredients using a spatula, stirring only until just combined. Do not overmix.

  7. Pour the batter into the prepared pan and spread evenly. Bake in the preheated oven for 40 minutes.

  8. Remove the brownies from the oven. Scatter the mini marshmallows and chocolate chips over the surface, then sprinkle with the remaining graham cracker crumbs.

  9. Place the pan under the broiler for 2-3 minutes, watching carefully as the marshmallows toast quickly and can burn easily. Remove when the marshmallows are golden and puffed.

  10. Let the brownies cool completely in the pan. To cut into bars, use a very sharp knife dipped in hot water and wiped clean between each cut for neat edges. Serve and enjoy.
