2 avocados
1 mango, diced
1 roma tomato, diced
¼ cup red onion, diced
2 jalapeños, diced
1 tsp fresh lime juice
1 tsp honey
½ tsp salt
Directions
Cut the avocados in half lengthwise, remove the pit, and carefully scoop the flesh into a bowl, then dice into bite-sized cubes. Peel and dice the mango into similar-sized pieces. Dice the roma tomato and red onion. Remove the seeds from the jalapeños if a milder heat is preferred, then dice finely.
Add all the diced vegetables and fruits to a large mixing bowl. Drizzle the lime juice and honey over the mixture, and sprinkle with salt.
Gently toss all the ingredients together until evenly combined, being careful not to mash the avocado. Cover the bowl with plastic wrap or a lid.
Refrigerate for approximately one hour, allowing the flavors to blend together and develop. When ready to serve, give the salad a gentle stir and transfer to a serving dish.
