Ingredients
1/2 pound apples, peeled, cored, and coarsely chopped
1/2 pound fresh blackberries
1 tablespoon brown rice flour
1/4 cup unsalted butter, softened (or dairy-free butter substitute)
1/4 cup granulated sugar (or sugar-free bakeable sweetener blend)
1/2 cup granulated sugar (or sugar-free bakeable sweetener blend)
1/2 teaspoon ground cinnamon
Directions
Preheat oven to 375°F. If making a tart, prepare and freeze a gluten-free shortbread pie crust according to package directions or your preferred recipe in a 9-inch tart pan with removable bottom. Once frozen, parbake the crust for about 10 minutes until lightly set.
Remove the parchment paper and pie weights or beans from the crust and bake for an additional 5 minutes until the crust is partially cooked. Remove from oven and set aside.
While crust bakes, combine the chopped apples and blackberries in a separate bowl. Add 1/2 cup sugar and 1 tablespoon brown rice flour, then gently toss until the fruit is evenly coated. Transfer the fruit mixture to the partially baked tart crust or divide among individual ramekins.
In a small bowl, whisk together the 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in the softened butter using a pastry cutter or two forks until the mixture resembles coarse breadcrumbs.
Evenly distribute the cinnamon-butter crumble topping over the fruit filling. Bake at 375°F for 25 to 30 minutes, until the topping turns golden brown and the fruit underneath is bubbling slightly at the edges.
Remove from oven and cool for 5 to 10 minutes. Serve warm or at room temperature with your choice of dairy-free ice cream, coconut whipped cream, or custard.
