Ingredients
1 1/2 cups shredded cooked pork
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups chicken broth
1 cup potatoes, diced and boiled 4 minutes
1-2 chipotles in adobo sauce, minced
1/2 cup shredded cheddar cheese
2-3 rolls prepared pie crust

Directions
Melt the butter in a large skillet over medium heat. Sprinkle the flour over the melted butter and stir constantly for 1-2 minutes to create a light roux, until it becomes fragrant and takes on a light brown color.
Gradually pour in the chicken broth while stirring to avoid lumps. Add the minced chipotles in adobo sauce and mix thoroughly. Simmer the sauce for 3-4 minutes until slightly thickened.
Add the shredded pork and diced boiled potatoes to the sauce. Stir well to combine, and simmer for 5-7 minutes until heated through and the flavors meld. Remove from heat and fold in the shredded cheddar cheese until melted. Let the filling cool slightly.
Preheat your oven to 400°F. Roll out the pie crust and cut out 4-inch rounds or rectangles using a knife or cutter.
Place about 3 tablespoons of the pork mixture on one half of each crust piece, leaving a 1/2-inch border. Fold the crust in half over the filling and press the edges firmly with a fork to seal.
Arrange the hand pies on a baking sheet lined with parchment paper. Bake for 20-25 minutes until the crust is golden brown and crispy.
Remove from the oven and let cool for 2-3 minutes. Garnish with fresh cilantro and serve warm.
