Ingredients

⅓ cup chickpea flour

¼ cup water

¼ tsp garlic powder

¼ tsp salt

Pinch of black pepper

Cooking spray

2 large eggs, beaten

¼ avocado, cubed

3-4 tbsp salsa

2 tbsp sliced green onions, for serving

Directions

  1. Spray a small nonstick skillet with cooking spray and heat over medium heat for 1-2 minutes.

  2. In a small bowl, whisk together the chickpea flour, water, garlic powder, salt, and black pepper until a smooth batter forms with no lumps.

  3. Pour the batter into the hot skillet and spread it into a thin, even layer. Cook undisturbed for about 6 minutes, until the bottom is golden and set.

  4. Using a spatula, carefully flip the crust and cook the other side for an additional 4 minutes, until lightly browned and crisp. If the crust is still soft and sticks to the pan, let it cook 2 minutes longer before flipping.

  5. Transfer the cooked crust to a plate and set aside.

  6. Spray the skillet again and return it to medium heat. Pour in the beaten eggs and scramble, stirring frequently, until the eggs are cooked through and no wet egg remains, about 2-3 minutes.

  7. Spread the salsa evenly over the chickpea flour crust.

  8. Top the salsa with the scrambled eggs, cubed avocado, and sliced green onions. Season with additional salt and pepper to taste and serve immediately.

Chickpea flour is stocked at Harris Teeter, Food Lion, Kroger, and ALDI across Charlotte, so no special trip required, and this recipe costs roughly $3.50 to $4.00 per serving depending on egg and avocado prices. The stated 15 minutes is honest if you move quickly, though scrambling eggs and slicing avocado add a few minutes of active work; the crust needs no rising or resting. This is a single-serve dish perfect for weekday breakfasts and reheats acceptably in a microwave, though the avocado loses appeal if done ahead. It's straightforward, requires minimal attention once the flour mixture hits the pan, and the avocado and salsa lean into Southern fresh-ingredient preferences without demanding anything out of season.
