Ingredients
4 (6-oz) filets Salmon filets, skin-on
to taste Kosher salt
to taste Freshly ground black pepper
1½ tablespoons Canola, vegetable, or light olive oil
2 cups Water or low-sodium chicken broth
1 cup Quinoa
1½ cups Baby arugula
2 Scallions, white and light green parts, thinly sliced
½ cup Crumbled feta cheese
2 tablespoons Fresh lemon juice
1 to 2 tablespoons Extra-virgin olive oil
Directions
Rinse the quinoa under cold water until the water runs clear, then drain well. In a small saucepan, bring the water or broth to a boil. Add the rinsed quinoa and stir. Reduce heat to low, cover, and simmer for 12 to 14 minutes until the quinoa is tender and most of the liquid is absorbed.
While the quinoa cooks, remove the salmon filets from the refrigerator and pat them dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper.
Heat the canola, vegetable, or light olive oil in a large skillet over medium-high heat. Once the oil shimmers, carefully place the salmon filets skin-side up in the skillet.
Sear the salmon for 4 to 5 minutes on the first side without moving them, until the skin is crispy and golden. Flip the filets and cook for another 2 to 3 minutes until the internal temperature reaches 165°F. Transfer the cooked salmon to a plate.
Once the quinoa is cooked, fluff it with a fork and remove from heat. Divide the quinoa among four serving bowls or plates.
Top each portion of quinoa with a salmon filet. Arrange the baby arugula on each plate and scatter the sliced scallions over the top.
Sprinkle the crumbled feta cheese over each bowl. Drizzle with fresh lemon juice and 1 to 2 tablespoons of extra-virgin olive oil per serving, then serve immediately.
