Ingredients

½ lb. ground extra lean turkey

¼ cup crumbled bacon

1 chopped onion

1 red pepper, chopped

1 jalapeno pepper, seeds and ribs removed, diced

5 garlic cloves, minced

2 (15 oz) cans black beans, rinsed and drained

½ tsp ground cumin

¼ tsp ground red pepper

½ tsp salt

1-2 chopped seeded tomatoes

½ cup (2 oz) shredded Monterey Jack cheese

¼ cup thinly sliced green onions

Cooking spray

2 tablespoons water (optional, for preventing sticking)

Directions

  1. Preheat your oven to 425°F.

  2. Heat a large nonstick skillet over medium-high heat. Add the ground turkey and a handful of the green onions, sauteing until the turkey is browned and cooked through, about 5-7 minutes. Transfer the cooked turkey to a plate and set aside.

  3. Lightly coat the same skillet with cooking spray. Add the chopped onion, red pepper, and diced jalapeno. Saute for about 4 minutes, stirring occasionally, until the vegetables begin to soften.

  4. Add the minced garlic, salt, cumin, and ground red pepper to the skillet. Saute for 1 minute, stirring constantly. If the mixture begins to stick, add 1-2 tablespoons of water to keep the vegetables from burning.

  5. Stir in the rinsed black beans and bring the mixture to a boil. Cook for 5 minutes, then mash the beans to your desired consistency using the back of a spoon—some prefer a chunky texture while others like it more creamy.

  6. Spoon the bean mixture into an 8-inch square baking dish that has been lightly coated with cooking spray. Top evenly with the cooked ground turkey, crumbled bacon, chopped tomatoes, and shredded Monterey Jack cheese.

  7. Bake at 425°F for 30 minutes or until the top is lightly browned and the cheese is melted.

  8. Remove from the oven and top with the remaining sliced green onions. Allow the casserole to cool for at least 10 minutes before serving to let it set properly.

  9. Serve as is, or with tortilla chips, sour cream, on top of a salad, or as a taco filling.
