1 1/4 cups granulated sugar

1/4 cup vegetable oil

2 large eggs

2 cups all-purpose flour

1 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon baking soda

2 cups apples, diced into chunks

2 cups apples, thinly sliced

1/4 cup unsweetened applesauce

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Preheat your oven to 350°F.

  3. In a large mixing bowl, combine the sugar, vegetable oil, and eggs. Beat the mixture for 1-2 minutes until well incorporated and slightly pale.

  4. In a separate bowl, whisk together the flour, salt, cinnamon, and baking soda.

  5. Add the dry ingredients to the egg mixture and stir until just combined; do not overmix.

  6. Fold in the diced apple chunks and the applesauce until evenly distributed throughout the batter.

  7. Coat an 8×8-inch square baking pan lightly with vegetable oil spray. Pour the batter into the prepared pan and smooth the top.

  8. Bake for approximately 60 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs. The cake is done when golden brown and firm to the touch.

  9. Remove the cake from the oven and let it cool in the pan for 10 minutes.

  10. Top the warm cake evenly with the sliced fresh apples and serve.
