Ingredients
1 cup sugar
½ cup butter (or margarine or shortening)
1 egg
2 teaspoons baking soda
2½ cups all-purpose flour
½ teaspoon salt
1 teaspoon ground cinnamon
1½ cups unsweetened applesauce
1 cup raisins
1 cup chopped nuts, optional
Directions
Preheat your oven to 350°F (175°C). Lightly grease baking sheets with cooking spray or butter.
In a large mixing bowl, cream together the sugar and butter until light and fluffy, about 2 minutes.
Beat in the egg until well combined, then stir in the applesauce.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Fold the dry ingredients into the wet ingredients until just combined. Gently stir in the raisins and nuts, if using.
Drop heaping teaspoons of dough onto the prepared baking sheets, spacing them several inches apart to allow for spreading.
Bake at 350°F for 10 to 12 minutes, until the edges are lightly golden and a toothpick inserted in the center comes out clean. The cookies should appear just set.
Allow the cookies to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
