Ingredients

2 tablespoons 2% plain Greek yogurt

1 tablespoon horseradish sauce

2 leaves Bibb lettuce

4 slices lean deli-style roast beef

4 slices tomato

1 cup fresh raspberries

Directions

  1. In a small bowl, combine the Greek yogurt and horseradish sauce, stirring until smooth and well blended.

  2. Lay out one Bibb lettuce leaf on a clean surface as your base for each wrap.

  3. Spread half of the horseradish yogurt mixture onto each lettuce leaf.

  4. Layer 2 slices of roast beef on top of the yogurt mixture on each lettuce leaf.

  5. Arrange 2 tomato slices on top of the roast beef on each wrap.

  6. Roll up the lettuce leaf tightly around the fillings, tucking in the sides as you go.

  7. Divide the fresh raspberries equally between two serving plates and place each wrap beside the berries.

  8. Serve immediately and enjoy.

This is a smart lunchbox build that stacks readily at Harris Teeter or Food Lion deli counters, and the five-minute claim holds if you're slicing pre-cooked roast beef and tomatoes. Cost per serving lands around $4–5, driven by the deli roast beef (typically $10–12 per pound); the horseradish sauce and greek yogurt are pantry basics at any major chain. The real caveat is that raspberries and roast beef together pull this toward summer entertaining rather than a weeknight dinner—and the wrap doesn't hold overnight, so it's a same-day, same-meal commitment.
