Ingredients
2 large eggs
1/4 teaspoon salt
1/2 cup water
1/2 scallion, chopped
1/4 teaspoon toasted sesame seeds
Directions
Fill a pot with water to a depth of about 1 inch and bring to a boil over medium-high heat. Place a steamer basket or insert into the pot so it sits above the boiling water.
Crack the 2 eggs into a shallow heatproof bowl or dish that fits inside your steamer basket. Add 1/2 cup water and 1/4 teaspoon salt to the eggs and stir gently with a fork until well combined, breaking the yolks and mixing with the whites.
Carefully place the bowl with the egg mixture onto the steamer basket. Cover the pot with a lid and steam for 12-15 minutes, until the eggs are set but still slightly jiggly in the center and reach an internal temperature of 160F. The texture should be soft and custard-like.
Remove the steamed eggs from the heat using oven mitts. Garnish with the chopped scallion and toasted sesame seeds. Serve immediately while warm.
