Ingredients

1 cup gluten-free rolled oats

1 cup raw almonds

1/2 cup unsweetened shredded coconut

12 medjool dates, pits removed

1/4 cup coconut oil

2 tablespoons chia seeds

2 tablespoons flax meal

1 tablespoon hemp hearts

1/2 teaspoon sea salt

1/2 teaspoon almond extract

2 tablespoons chocolate chips

water as needed

Directions

  1. Add the oats, almonds, shredded coconut, chia seeds, flax meal, hemp hearts, and sea salt to a food processor. Pulse for 1-2 minutes until the mixture is broken down and well combined.

  2. Add the pitted dates, coconut oil, and almond extract to the food processor. Mix until the ingredients bind together and a dough-like consistency begins to form.

  3. Add water 1 tablespoon at a time, pulsing after each addition, until the mixture comes together into a firm, cohesive dough.

  4. Add the chocolate chips and pulse 2-3 times until they are evenly distributed throughout the mixture.

  5. Line an 8x8-inch baking dish with parchment paper, allowing excess paper to overhang on the sides. Press the mixture firmly and evenly into the prepared dish, pressing down hard to compact the bars.

  6. Place the baking dish in the refrigerator for 1 hour to allow the bars to set completely. Alternatively, freeze for 30-45 minutes for faster setting.

  7. Once set, grasp the overhanging parchment paper and lift the entire block out of the baking dish. Using a pizza cutter or sharp knife, cut into 10 bars of equal size.
