Tender, lightly sweet scones studded with tart dried cranberries and rich chocolate chips. These classic Irish-style treats are baked until golden and best enjoyed warm with strawberry jam and clotted cream.

Ingredients
2½ cups all-purpose flour
120 grams cold butter, cubed
2 tbsp granulated sugar
1 cup dried cranberries
1 cup chocolate chips
1 large egg
50 ml milk
1 egg yolk for basting
Directions
In a large mixing bowl, combine the flour, sugar, dried cranberries, and chocolate chips.
Add the cold cubed butter to the flour mixture. Using your fingertips or a pastry cutter, work the butter into the flour until the mixture resembles coarse breadcrumbs.
In a small bowl, whisk together the egg and milk until well combined.
Pour the egg and milk mixture into the flour mixture and gently fold with a spatula or knife until a soft dough forms. Do not overwork the dough.
Turn the dough out onto a lightly floured surface and gently shape it into a round about 1 inch thick. Cut into 14 wedges or use a scone cutter to form individual scones.
Preheat your oven to 210°C (410°F).
Place the scones on a baking sheet lined with parchment paper. Lightly brush the top of each scone with the egg yolk for a golden finish.
Bake for 15 minutes until the scones are golden brown on top.
Remove from the oven and allow the scones to cool slightly before serving. Enjoy warm with strawberry jam and your choice of clotted cream or butter.
