Ingredients
600 grams boneless chicken thighs, cut into bite-sized pieces
1 large potato, peeled and cut into chunks
1/2 cup diced carrot
1/2 cup green peas
1 large onion, finely chopped
2 garlic cloves, minced
1 inch fresh ginger, minced
3 green chillies, whole or slit
1/2 teaspoon turmeric powder
1 inch cinnamon stick or cassia bark
1/4 teaspoon peppercorns
400 milliliters fresh or canned coconut milk
1 bay leaf
Salt to taste
Freshly crushed black pepper to taste
1/2 lemon, for juice
Directions
Heat a large pot or heavy-bottomed pan over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until the chicken is lightly browned on the outside.
Add the chopped onion, minced garlic, and minced ginger to the pot. Stir well and cook for 2-3 minutes until fragrant and the onion begins to soften.
Stir in the turmeric powder and cook for 30 seconds to bloom the spice, then add the cinnamon stick, peppercorns, bay leaf, and green chillies.
Pour in the coconut milk and bring to a gentle simmer. Add salt to taste and stir well to combine.
Add the potato chunks to the pot and simmer uncovered for 8-10 minutes until the potatoes are almost tender.
Add the diced carrots and green peas to the pot. Continue to simmer for 5-7 minutes until all vegetables are tender and the chicken is cooked through (internal temperature should reach 165°F).
Taste the stew and adjust the seasoning with additional salt and freshly crushed pepper as needed. Squeeze the lemon juice into the pot for brightness and stir well.
Remove from heat. Serve hot in bowls, garnishing with fresh cilantro if desired. Discard the whole spices (cinnamon stick, bay leaf, and peppercorns) or leave them in for fragrance.
