Avocado Goat Cheese Stuffed Burgers with Sriracha Dipping Sauce

Ingredients
1 lb ground beef
1 large avocado
2 Tbsp soft goat cheese
Salt and pepper to taste
1/2 cup avocado oil
1/2 cup extra virgin olive oil
1 whole egg
2 Tbsp sriracha
2 tsp yellow mustard
1 tsp garlic powder
2 tsp white pepper
1 Tbsp lemon juice
2 tsp salt
Directions
Remove the ground beef from the refrigerator and let it rest on the counter for about 10 minutes to bring it closer to room temperature, which helps it cook more evenly.
In a small mixing bowl, mash the avocado and goat cheese together using a fork until the mixture is smooth and well combined. Set aside.
Gently form the ground beef into 6 equal-sized patties using your hands. Work carefully to avoid overworking the meat, which can make the burgers dense.
Spoon the avocado-goat cheese filling onto the centers of 3 of the patties, leaving about 1/2 inch of space around the edges to allow room for sealing.
Place the remaining 3 patties on top of the filled patties and carefully pinch the edges together all the way around to seal in the filling completely.
Season the outside of each stuffed burger with salt, pepper, and garlic powder and white pepper for extra flavor.
Preheat your grill to high heat. Once hot, grill the stuffed burgers for 4 to 5 minutes on each side. The burgers are done when the internal temperature reaches 160°F when measured with a meat thermometer in the thickest part, avoiding the filling.
While the burgers are grilling, prepare the sriracha dipping sauce by adding the avocado oil, olive oil, egg, sriracha, mustard, and lemon juice to a small container or mason jar.
Use an immersion blender to blend the sauce ingredients until thick and emulsified, similar to mayonnaise. This should take 1 to 2 minutes.
Serve the grilled stuffed burgers with a generous dollop or small cup of the sriracha dipping sauce on the side for dipping.
