Ingredients
3 pounds crisp cucumbers, sliced 1/4-inch thick
1/2 medium onion, thinly sliced
1/4 cup kosher salt or sea salt
2 cups white vinegar
1/2 cup water
1 cup sugar
2 tablespoons mustard seeds
1 teaspoon celery seeds
1 teaspoon turmeric
Directions
Place the sliced cucumbers and onions in a colander set over a large bowl or sink. Sprinkle evenly with the salt, then toss gently to coat. Allow to stand for 1 to 2 hours; the cucumbers will release considerable liquid as the salt draws out their moisture.
Rinse the cucumbers and onions thoroughly under cool water to remove excess salt. Arrange them in a single layer on baking sheets lined with paper towels, cover with additional paper towels, and let dry overnight in a cool place.
The following day, combine the white vinegar, water, sugar, mustard seeds, celery seeds, and turmeric in a large saucepan.
Bring the mixture to a boil over medium-high heat, stirring occasionally until the sugar dissolves completely.
Prepare sterilized canning jars according to standard canning procedures. Pack the dried cucumbers and onions into the jars, leaving approximately 1/2 inch of headspace at the top.
Carefully pour the hot vinegar brine over the cucumbers and onions, ensuring they are completely covered and maintaining the 1/2-inch headspace. Seal the jars tightly according to your canning jar manufacturer's instructions.
Refrigerate the sealed jars and allow the pickles to rest for at least several days before opening. This resting period allows the flavors to fully meld and develop. Serve chilled directly from the refrigerator.
