Ingredients

2 pounds boneless English-style beef short ribs, trimmed of excess exterior fat

3/4 teaspoon coarse sea salt

1 teaspoon coarsely ground black pepper

Directions

  1. Remove the beef short ribs from the refrigerator 15 minutes before grilling to allow them to come closer to room temperature for more even cooking.

  2. Pat the ribs dry with paper towels to help develop a good crust when grilled.

  3. Season both sides of the ribs evenly with the coarse sea salt and coarsely ground black pepper.

  4. Preheat your grill to medium-high heat (around 400°F). If using charcoal, arrange the coals to create a medium-hot fire.

  5. Place the seasoned ribs directly on the grill grates. Grill for 12-15 minutes on the first side without moving them, allowing a flavorful crust to form.

  6. Flip the ribs and continue grilling for another 12-15 minutes on the second side until the internal temperature reaches a minimum of 145°F for medium-rare, or longer if you prefer a more well-done result.

  7. Remove the ribs from the grill and let them rest for 5 minutes before serving to allow the juices to redistribute throughout the meat.
